I planned and cooked Christmas dinner for 8 this year. It all worked out pretty well (aside from the *dramatic* oil spatters that greeted our guests as a tossed cauliflower, which apparently still had water on it, into hot olive oil!) Here was the menu:

Grilled Salmon & Asparagus
Butternut Squash & Vanilla Risotto
Pan-Roasted Cauliflower
* This was super easy and the lemon hint is amazing.
Creamed Spinach
DESSERT
Wesson Oil Chocolate Cake & Strawberries

Thanks Jim! I have to say, it was really good and I think our guests loved it. Everyone was turkey & hammed out, so it was fun to try a few new things.
I wish that I had looked here BEFORE I made the usual shiitake risotto. I had a butternut squash risotto several years ago, but never got the recipe. The whole meal looks fabulous - I'm sure your family enjoyed it.
